Salt + Pepa Salt

Pepper without the salt -- like mustard without the ketchup, like Herb without Peaches -- it's just not the same dining experience. It's not necessarily worse. Indeed, sometimes it can be a welcome change, a subtle, surprising shift of flavor. But different, that it is, certainly.

This week: some pepper; no salt. The salt is gone.
